Mushroom Cookies (gluten-free)


  • 10 grams mushrooms

  • 1 cup oat flour

  • 1 cup almond flour

  • 1/2 cup coconut sugar

  • 5 tbsp coconut oil

  • 1 ripe brown banana

  • 2 tbsp oat milk

  • 2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup chocolate chips


  1. Grind 28g of mushroom into a fine powder. You can use an herb grinder, a mortar and pestle, or blender.

  2. Mix flours, sugars, and banana in a mixing bowl.

  3. Add mushroom powder and mix until blended, using an electric mixer is preferable to get more even dosaging for cookies.

  4. Add chocolate chips

  5. Cover mixing bowl and chill dough for at least 1 hour in the freezer or 3 hours in the fridge.

  6. Once the dough has solidified, scoop 1 tbsp size balls and place on baking tray.

  7. Preheat oven to 350°F or 177°C

  8. Set cookies in oven for 15 minutes

  9. Allow to cool and enjoy. You put the cookies in a jar and store in the freezer for later.
